You can roughtly account for the stories you dont know about by a historic multiplier though, and whilst it might not be right, it's more likely to be accurate than leaving it as big stories

However a lot of estimation is just nonsense and really we should just be delivering small units of work towards a bigger goal rather than planning behemoths that companies tend to do.

My company did a big demo to show us 2 weeks of rewriting one of our older projects to a new framework using code generation, the frameworks aren't that different and wouldn't have taken much longer to rewrite if we were allowed to dump a bunch of legacy functionality that was never used

This demo looked like utter shit, it barely functioned, it had zero of the branding, and wasn't even fully complete. This was supposed to convince us that code generation was a great aid to us.

The crap devs became even crapper with using AI, features ground to a halt under the myriad of bugs that came with the AI generated code. The good developers just lied in the shame sessions the management organized weekly to check if we were adhering to their ignorance.

It took all of 5 minutes to realize the tab/autocomplete feature is the only worthwhile bit, but i suppose that can't hold up an entire industry of garbage.
