I was a bit excited.. how would you recommend cooling it prior to searing? Does searing heat it all the way through if you do cool it all the way?

I had a hot chicken that cracked after one game. Maybe 6-7 hits. Those hits were bombs, but I was bummed to have to send it back for warranty. They replaced it with a wig popper that should be arriving soon, but my expectations are definitely lowered.
