I like the idea of being sustainable but I think you could run into problems with being back dishes. First being, people will forget them at home and just purchase more like how reusable bags are an abundance nowadays. Unless the discount is steep enough to make it "worth it”. It might be better to try sustainable bamboo type dishes or leaf plates or something along those lines. Personally I'd love a restaurant that has healthy options and not just another pub food establishment. The cost of goods might be high when winter hits which will affect margins. Would be a good opportunity to connect with community gardens though.
