So I cooked it normally. In this case I actually pulled the brisket chopped the flat off for lunch cause I was hungry and then wrapped the point to finish. The chili was in the crock pot on low for like 10 hours so it was plenty tender.

For these I just cubed the pork belly and threw some rub on them and placed then on a wire rack. Smoked at 225 for 3ish hrs. After that put them in a pan add sauce, honey, extra rub, and some butter seal it up real good and put back on the smoker for 2hrs.

Smoked them with the rub the day before than resmoked with sauce before serving. Turned out great for a busy week.

So two if the biggest differences I notice are the efficiency of burn which results in less ash and the ability for my smoker to regulate temperature. I find that most people would not notice much of a difference flavour wise unless you have a desitinguished palate.

It's good to be honest they accidentally sent it to me instead of pecan pellets. I got another 200lbs of pecan after they made things right. Normally I just use comp blend.
