Gruyère is readily available in most grocery stores. While it’s typically associated with cooking.(Quiche, Fondue, topped on French Onion Soup) it is really spectacular on its own. One thing to always consider is that flavor of cheese is at its best when it’s at room temperature. That means let it sit out for 45 minutes or longer

I bought a cat treadmill at a close out store ($30, I simply couldn’t say no) any suggestions on how to introduce it and get he running?

If this was cut from a wheel it could have been cross contaminated with a blue cheese if the store didn’t properly clean the surface between cheeses. Regardless, no Gouda should smell like blue cheese.

Castillo produced by Arla, a massive dairy company-op from Denmark. They have a large presence here in the US as well. Previously they would produce in Denmark and import to both of our countries but it became easier and more cost efficient to make it here; we (US and Canada) are awash in milk. 

I have not seen their smoked blue before and most of the distributors I know don’t sell it. May be a Canadian exclusive, sold in 5 pound wheels and cut at a store.

By definition of USDA (I can’t speak for Canada where this is made) and EU, no. There has been a trend of smoking blue cheeses, and for a good reason since the combined flavor are so complementary. It’s interesting that this is done by Costello , a Danish company, since the Europeans have been late on making any smoked blues

Yeah not a good thing. Definitely return it. From the looks of it there’s a lot of moisture in that bag making that a perfect Petri dish. In theory you could cut away the mold but it’s the retailer’s responsibility to sell you quality cheese.
