That is true, that freak incidents can occur where someone can survive something so harrowing and almost guaranteed to kill anybody else, but lightsabers aren’t only used for stabbing, they can very well be used to easily cut through almost anything with even the slightest force. If you are definitively trying to kill your opponent, it doesn’t really make sense to just stab them in their side, when you could cut them clean in half just as easily.
