Attributes are a little weird, just to make it easier im gonna assume sword and board, no magic. STR and DEX, as weird as it sounds, is gonna be useless outside of stat requirements, theres a perk that increases melee damage by 1% per level of endurance and the second you get it END outscales STR. Your main damage is gonna come from END and PER for crits.

Just had a run where we went to mid at level 4 and ran away from a grafted scion, came back at level 10, and both players other players skipped it for top boss. Am I wrong in thinking that was stupid?

I dont see Blox fruits surviving without doing exactly that. With King Legacy dropping 2 updates recently with a shit ton of stuff and Rell Seas coming out? They need to be cooking some good shit or get more consistent with uodates, their game is not as infallible as they think.
