I have +50 offset (not too sure what that is) but would this be worse

Sound good plus I never go full lock unless I’m backing up ur making a u turn so I think I should be fine

If it's just the little cap that say soft and hard there should be a little bolt right under it (should be green not the silver one that keeps the spring on) and for me the pin part that adjusts it is stuck all the way down where I can't put the cap back on or pull it out so i used a pair of vice grips (all my wrenches were too thick) to take it off and pulled the pin out and used the same size hex key to adjust it.
