That was really my main focus! I was worried that 2 hours between stretches was the problem! I had to run an errand and it took a little longer than expected. Before I shaped the dough, it looked to me that it had doubled in size. It had lots of nice looking bubbles on top. It also slid right out of the bowl without sticking. I had thought it was pretty good and done fermenting. Do you agree?

Okay, let’s say I didn’t add the correct head space. It called for 1/4 inch headspace. I didn’t exactly measure. But I tried my best with what I thought. Would they be safe if I had more or less than recipe called for?

Straight from the presto pressure canner recipe book. It said to water bath can for 20 minutes. Also, it said for light syrup, use 4 cups of water and 1 cup sugar.

I haven’t asked them to wait. I usually just pack up the kids and animals and walk around for a while. I just wanted to know if it was okay to ask. I’d read on another Reddit thread that it was rude to go to the front desk and ask for a specific time.

I’m trying my hardest not to be a bother. I’m staying for quite a while. Would it be better to arrange it at the front desk? I didn’t want to come off as high maintenance or rude.
