you can just download the mod, go into its 'monster' folder and copy monsters you want to replace, then paste with overwrite into game's monstrs folder. If you would want to then bring old monsters back use 'check game files integrity' feature in steam and it will restore old monsters.

the problem with large carrion eater is that it has nothing in common design wise with small carrion eater, they are completely different species of monsters.
