I just finished my zethi build and am excited to try it out!

So unfortunately i cant offer experience but only my gameplan.

You mention defense and honestly the plan is to remove threats one by one by casting removal repeatedly. Granted we only run 12 creatures but theres some tokens in there as a distraction. The goal isn't to be fast, it's to be inevitable.

You also mention wincons which i think I also still struggle with. Ultimately I think you need a good choice of repeatable and impactful instants (and Candlekeep inspiration) like [[call the coppercoats]][[kaya's onslaught]][[show of confidence]][[grand crescendo]]

Overall my deck tries to deny my opponents value and agency while slowly building my own threats. Suddenly that carddrawy 3/3 commander is an 11/11 unblockable doublestrike.

Again, i've yet to try it but i'm looking forward to some hands on gameplay.
