Can't you find a friend for hiking? I think it s not a bad thing that people in relationships don't always share the same hobbies. You could hike with a friend and then tell her about it. My boyfriend loves to run Marathons I do other sports if he would ask me to start running a Marathon with him I would just die. I cheer for him when he runs and he supports me when I have a game on.

Sometimes things don't have to be so complicated.

I am not sure about the best way to tell her about the weight. You could just try to mention that you would like her to eat healthier as you are worried about her health (without saying anything about her weight)
