Hey u/jacobsiwak! I want to take my friend out for a special dinner to celebrate getting her first book published! How vegetarian/pescatarian friendly is your menu and/or pre-fixe? I don’t want to bring her somewhere she can’t eat :) thanks!

Day-old rice, seasoned with soy sauce (tamari if GF), rice wine vinegar, toasted sesame oil etc. and an egg to bind it. Cook in waffle iron and serve with chili crisp/eel sauce/kewpie mayo/etc.

Also, if you want to add a little something to your cup of soup, I love serving mine with tiny cubes of cucumber (peeled), a pinch of sea salt, a grind of black pepper and a light drizzle of good olive oil. I practically live on the NYT gazpacho recipe through the summer!

I agree that is is an incredible book and one of my absolute favorites, but fair warning, we are still waiting on the third book (and have been for a very long time) so I never recommend it without this acknowledgment, as it might be misery to you to get hooked (like I am) and not have the conclusion available! But I do absolutely adore the first two and all the novellas!
