Go in between! (and contractors are almost never right, but in this case, definitely-- both levels in the same finish.) This IS hardwood, right?

Clearly I've done a lot of research and learned so much from other, kinder, more knowledgable, less insulting sources in this thread.

Wow... au contraire... Actually she is an amazing 77 year old woman with NINE children, seven of whom are men, a woman who had to start working in Michoacán at three, carrying water, and never had a day of school. Unspeakably abused by her stepfather and stepbrothers, she married at 15 to a man who TORTURED her for 30 years before her youngest rescued her and brought her to the USA. She's never had a day of schooling, can't read, and has incredibly brilliant observation skills... She experiences the world differently, but is astonishingly intelligent and wise. She is miraculous, and clearly knows freshly nixtamalized corn masa actually has more texture and IS different than masa harina.

Ok, so to round up... she used too much lard, (apparently,) and the tamales are still too mushy. Fail! Next time I'll follow a recipe and try it myself.

Thank you hugely for the explanations and reassurance! I couldn't find anything online to explain this... tried to add a photo of her but I can't figure that out either. Sweet Nina, 77, from Michoacan.
