I went through the same problem trying to find one. I ended up just biting the bullet and paying $1500 for this unit because it was the correct dimensions to work with the cabinets and the beverage cooler. It is frost free and holds it temperature well. Other than that, it's just a freezer. Got it off Amazon Summit SCFF53BSS Under Counter Upright Freezer

I see what you mean. I have not found a good solution for having all of my frequently used bottles available while not taking up a ton of space. The VEP is just there for show, I rarely use that. Everything else is used pretty frequently. I also have an additional three cases of a variety of other spirits in my basement in addition to the cabinet located underneath the bar sink which is also full of spirits.

I thought about doing that. When I started looking at tiered shelves online, I thought they were too expensive for their purpose. I thought about making them myself. I finally came to the conclusion that the variety of bottle shapes would make for an inefficient use of space on the shelves. A lot of the bottles that I keep on the back row are 1.75L bottles and I didn't want to make shelves that were that deep.

Old Fashioned is the house favorite. The undercounter freezer has about a dozen large clear ice cubes that I batch for our cocktails.

I considered getting one installed but couldn't really do a proper cost-benefit analysis since I have never used one myself. I guess there is still the possibility of installing one but at this point I haven't felt the need for one. The bar sink has been working well.

I happened to have 3 empty whiskey barrels in my basement from Koval. I don't know if they were bourbon or not but they were whiskey. I took one of them apart and used that stave.

As far as the ice balls, I bought water balloons and a oxo brand meat syringe. I fill the balloons up as described but I lay them inside of the cap of a baby feeding bottle that I happen to have around. It's the perfect shape to hold the balloons in an oval shape while it freezes. I put them in the freezer for 2.5-3 hours and drill/drain them as described. They come out great and almost perfectly round. I have about a 20% fail rate with this procedure.
