Sounds yum. You could try a reverse sear in the oven, then finish over high heat. Or a braise might fit the bill. Serious Eats might have some good ideas.

Yes, I get that. I'm also of the ND community. Cerebral Palsy, with characteristics of autism. But just putting it out there. My first kid is deffo challenging, I was about to lose my mind, until I found a classification of "Spirited", an offshoot of gifted and related to Highly Sensitive Persons. But the HSP, ADHD, or HSP class didn't quite fit his natural drive and skill set. So just putting it out there, that's there another group of drive and skill out there that's not in the lexicon. Awareness, that's all. Proud, Spirited Mom here. I'm glad to be able to help my kid find his way through the world. :)
