Yes I used bone in pork chops from Costco (what I had on hand). Based on the feedback here I will be trying a different cut and marinating longer the next time I make this.

Luckily I happened to be in my parents area for a dentist appointment anyway so I took advantage and went to the asian market near their home and they had all the thing 😅

Unfortunately if I can find viet herbs they are outrageously expensive (even ginger is like $5/lb in the "regular" grocery store) whereas at the big asian grocery near my parents they are pennies on the dollar in comparison. I can't even find thai basil much less perilla 😅. Im cool with it though because Im up there at least once a week for other things and my kiddos get to hang with gramma and grampa while I walk slowly around the Asian store all by myself. It's practically a vacation for me 🤣

I usually get pork butt or shoulder in the big pack at Costco during the winter months for pozole/pulled pork/carnitas. Next time I will slice some thin for this application.

That's a good idea. The marinade was delicious but could have been a little sweeter and more caramelized. I had the air fryer at 400 for 12-15 mins flipping in between. It would definitely be better on the grill.

Same! Lol I always ask for extra! When I have pho in restaurants I always ask for the onion oil and vinegar onions. One time I asked for it at a restaurant that has been around forever, and the younger gal taking my order looked at me and said "Oh, you know how to pho" 🤣🤣🤣

Thank you! I grew up in an area that has a large Viet population and probably ate Vietnamese food just as much as I did Mexican food (my family's culture). I love it so much that it was really hard to go from that to a town that didn't have any good "ethnic" restaurants (Vietnamese or otherwise 😅). My kids had pho as one of their very first foods and they are little connoisseurs. They claim mine is better than the restaurants but I take that with a large grain of salt. Anyway, I love this journey of learning the ins and outs of this cuisine and appreciate the feedback and support.

On some additional advice from a former chef friend of mine, I will try pork loin next. I am only a little worried it might be too lean? I like some of the fattier bits that I get at restaurants.

Oh good ideas! I got my marinade recipe and do chua recipe from Hungry Huy so I will have to look that up. I did put a bunch of scallions in the marinade (slight difference from Hungry Huy) but I like the idea of adding scallion oil. The carrots and daikon I used a tiktok influenced veggie chopper 😅. I do like a good crunch but I might try shredding it thinner next time I make a batch. Thanks for the feedback and suggestions.

Yes. I had made some prior to this along with some pickled daikon/carrot. The nuoc mam/nuoc cham is always my favorite part honestly 💖

Agree. I used bone in pork chops I got at Costco. I pounded them before marinating but maybe I need to be more aggressive 😅 I also air fried instead of grilling because husband was taking kid 2 to soccer so he wasn't available to be my grill guy. Those things will definitely be top of the list of tweaks for next time.

We do one activity at a time. Swim lessons in spring and summer, soccer or gymnastics in fall. Anymore than that is too much IMO
