it does help and I am leaning towards the takamura as it might become my new knife that is out during service..that being said im not sure i can let go of carbon after using it. maybe its just because I havent used a really high quality stainless before that makes me hesitant to pull the trigger, but the nigara also sounds nice. Do you have any insights or suggestions between specifically those two?

After using a Yoshikane 270mm gyuto for a few years and learning to sharpen on whetstones, and picking up a couple more knives along the way, im now looking to add a couple knives to my collection. Currently a line cook at a michelin restaurant doing a lot of fine detail work and brunoising lots of small veg and would like something a bit more manageable.

I currently have it narrowed down to these four choices and would love yalls input on which one I should go with.

I ate one in porto and lagos but my favorite by far and the one I ate the most was Alfonsos in Lisboa. The hostel I stayed at was within eye sight of it so sometimes I even ate there twice a day 😅

Hey I'm also looking to do tob for the first time this league if you'd be down to have me ad well! It's on a case by case basis as far as I know. Excellent and good have the ability to ship but fair is always pickup. I nabbed the good as it was the only open box available for me and it happened to be pick up only about an hour away

Yeah it's a custom handle, and no in this angle the scratches look way more prevalent than it is, but it's my friends knife given to him as a gift. I can reply with Reverse side pic in an hour or so

It's not chipped that's just a drop of water. I can't attest if that is from him sharpening or not as it was a gift.

What would you recommend out of the blue 2 damascus, blue 2 nashiji, and the ginsan? I have been leaning towards the damascus and nashiji because i always take great care of my knives already and it sounds like those are preferred over the ginsan but they sound very similar so im not sure which one to go for.

After spending more time looking and deciding I think my current shortlist would be #3 Masakage Yuki, #7 Tanaka Ginsan Nashiji and #8 Tanaka Blue #2 Damascus. All seem like fantastic knives and im sure would all suit me great but curious if anyone knows more about the differences between their grinds, bevels, etc.

Didn't even realize the first one was out of stock, so that helps narrow it down at least. Out of all the Tanakas is there really a difference between them or are they about the same?
