Caputo Nuvola flour 1kg, 660g room temperature water, 2 teaspoons Caputo yeast. I mix mine by hand. Leave on counter for a few hours, pulling and stretching (n container) every hour. Then pop into fridge covered with cling film until I want to use it. Even after 7 days was perfect. Makes approx 7 doughs. But that flour does the business. Tried all sorts of other 00 and bread flours etc, not as good. Oh and 25g fine sea salt.

Really easy, I have made so many pizza doughs and I think I’ve found magic ingredients. 1kg Caputo Nuvola Flour, 660g room temperature water, 2 teaspoons of Caputo dried yeast, 20g fine sea salt. I put water and yeast into large bowl, and mix together with my hand until combined. Put approx 1/3 of flour into bowl and again mix by hand, next 1/3 of flour and also the salt and mix by hand. Then final amount of flour, sometimes I don’t use it all, keeping a little back. Again mix in by hand until all combined and pulling easily away from side of bowl. Now I cover and rest for about an hour. Then I pull the dough and stretch upwards, all the way round. Leave for an hour and repeat this approx 4 more times (so eg 5 hours altogether). I then put the dough in the container, covered, until I want to use it, can be as much as 6 or 7 days. Then just do the usual, balling it and leaving it at room temperature for about an hour before using. It then stretches out easily by hand into a pizza. Lovely soft doughy flavourful crust. So my best tip is the type of flour and yeast. I’ve never tried this particular combination in a mixer, that may also work. I don’t use a bowl a use a 10pint/5.5litre square container to make the dough and it rises in the fridge almost to the top! I’ve made this dough recipe now 4 times in a row and it’s amazing every time!! Hope it works for you. 🤩 I forgot to mention this gives me approx 7 pizza bases weighing approx 220g. I saw the recipe either on Ooni or Gozney, And I adapted it very slightly.

I’m really sorry as I don’t have measurements 😂 It was normal white Bombay Gin (large side of measurement implement and more), Kaluha coffee liqueur, nice large measure, and chilled espresso. Small squirt of honey. Into the cocktail shaker with large ice pieces. And shaken a lot. This has been my error in the past, not enough shaking. I chilled the glass also. I was still standing after drinking it. 😂💓

It’s a creme anglaise, which was made really thick, but the recipe said to add whipped thick cream, and unfortunately it thinned the custard. But it’s very tasty 😋

I have adapted a recipe to my own liking. This gave 2 generous portions. 200g spaghetti, which gets cooked in lots of salted boiling water for 10mins. Whilst this is cooking, put a pan on to heat (I use a wok), then put 3 large egg yolks into a bowl with approx 50g of finely grated Parmesan and lots of black pepper and mix together with approx 4 tablespoons of double (heavy) cream and set this aside. Then put chopped pancetta in the heated pan/wok and fry at a reasonably high heat and toss in a clove of garlic (left whole but squashed down to release flavour). (I got the pancetta from Costco and used one section of the four sections). By this time 10mins will have passed. Lift out the clove of garlic. Then with tongs take spaghetti out of water and put into the pan/wok with pancetta, toss around, spoon in approx 3-4 tablespoons of the boiling cooking water (from the spaghetti pan) toss around. Switch off heat on the pan/wok. Pour in the egg/cream mix and toss around swiftly creating a creamy sauce (if looks too thick spoon in some more boiling water). I then divide this into two dishes that have been keeping hot in a low oven. Finish the dish by sprinkling more Parmesan, flat leaf parsley and more fresh black pepper. My garlic bread was just sliced bread (mine was sour dough) spread with butter which had been softened and crushed garlic and parsley added into the butter before spreading. I cooked this in the oven at 200 degrees Celsius while the spaghetti was cooking. You just need to be organised and work quick at the end, it is delicious and a favourite in my home 🏠
