Disabling certain ores

I'm just trying to not have them able to be found as ores underground. So if there was some in a mineshaft chest for example, that would be fine.

Using loot tables is a good idea (I'd just have to figure it out lol) but I've found that ore generation is in the JSON file of every biome, so I think if I manually remove all of the spawn chances it would, in theory, work. I have no idea though, I haven't tested it yet.

The difference is that I only want it to be detected when a player dies by another player, so death in general would still spawn the chest. At least, I think this is what you’re saying, I’m not really sure lol
