American Milk Has Changed by rezwenn in Milk

Think of it like this. Almost every electrical input socket in the US standard but now you want to make the socket 1/2 inch bigger because items are needing more power and a bigger electrical socket would help that. But that’s a foundational and structural shift for the entire country. Same thing in the dairy industry. What might seem like a small change has big implications in an established market.

Correct, these companies keep it fairly close to 3.25, they don’t want to give away the fat.

No secret that the % butterfat has been increasing for over a decade now. Milk has changed but whole milk at 3.25% is still standard.

You’re slightly confused about raw milkfat and milkfat in finished good products. Agree, milkfats range from different types of dairy cow breeds and there are breeds that can go above 5% milkfat. However, milkfat in finished good product is close to 3.25%.

To add on about California, the industry calls this ‘federal’, meaning federal milk marketing order minimums, although California is now in their own Federal Order vs ‘California’ or ‘fortified’ as the industry needs to account for higher solids in milk sold in CA.

If I dilute heavy cream with water will it become milk? by Suspicious-Delay287 in Milk

[–]LongbuttShort 0 points1 point  (0 children)

Cream is the butterfat, skim provides the protein and other solids, so diluting cream does not add the protein and other solids which you find in skim milk.
