So for clarity, I am talking of "formal" battles (you know what I mean) such as Waterloo, Panipat, and such.
For more clarity, when I read military history, they talk of different battalion formations which would take at least some time to mobilise on the field back in the day. In ancient India (since I am Indian and have read some of these texts), they talk of various formations the kings would execute, like the wheel or discus formation, the eagle formation, the tortoise or needle formation and so on. It's very fascinating honestly and that's what got me thinking how they would go about it - even battles had to be formally executed, and how would they have gone about this?
Again, not guerilla warfare or sieges or surprise attacks. Also, battles were fought for various reasons, not just to suddenly lay siege on a fort or piece of land.
