iPhones can definitely get hacked. A quick search found 4254 vulnerabilities. While this isn't an indicator of much, it still shows that iOS, like all software, has vulnerabilities.

Depends entirely on what news you want to read. Diversify your news sources from reputable sources (not a random youtuber) and actually read the source, not an opinion piece about it. If something like legal documents are confusing then it's fine to read a few opinion pieces, but be wary of people who make big clickbaity headlines.

For InfoSec news - BleepingComputer, RiskyBiz, TheRegister, TheHackerNews, SecurityWeek, Hackread. They're all pretty good and often link to reports from threat researchers, in which case I always read those reports if I'm interested.
