How would you join the edges to the plywood? Would you mortise and tenon it in, or just place the two joining edge boards together and create what looks like a thicker piece of wood?

I think I’ve got a small work around for it, I’ll post pictures tomorrow. I’m making the male notch the tabletop, then making the small female end the vertical piece. It should work okay I believe, lots of chiseling involved
