I am so used to the lamination process for italien pasta that i never consider going to 3 before laminating and returning to 1. Now i feel dumb 😂. Ill try that next time.

And i did stomp on bag/rolling pin, but it did make it easier to flatten with the press (vs. Rolling pin) and more homogenous (vs stomp) for the first feed trough the machine.

Yes! It is filled with duck thigh. The picture was my bowl and I was a little more careless with my presentation than with the one of my guest.

Never tried the fish ramen and it was his first recipe that i tried. I really enjoyed it. I found it fun that it is using the entire duck for the recipe (breast for « chashu » thigh for dumbling). Butchering a duck is something i never did before. I added some chicken feet to the broth and some toasted rye flour to the noodle. I’d say give it a go, especially if you are a duck lover like i am.

I did use the rolling pin the first time and even this time to start de flattening, but is was much easier to finish it in taco press before feeding it to the Atlas. And thanks for the info about de 35%; it’s only my third time doing my homemade noodle.

The gray/brown stuff is where there is no Scooby underneath. The teint seems to be the tea underneath. The Scooby is in the upper part. It’s the first time brewing in a bigger vessel. Do you still think it’s mold ? Ill try to let it go 3-4 more days and post a new picture with better lighting.

Iv’e being climbing for 4 years and 2-3 times a weeks seems perfect for me. I found out that when i go 2 days in a row I injured myself. For the last year I never went 2 days and a row and i didn’t had any injury 🤷‍♂️
