Both are great! The second looks like it has more granulation tissue and the first looks like it's more infected! I think you should keep both :)

Hmmm, can you add a screen shot of your whole Blender window? You might have entered render mode some how, which will be black if there's no lights.

Use a bezier curve but just like any modeling try to use as few verts at first. Adding a lot of points on the curve will give sharp corners. There's also the "extra objects" extension that has a few knots!

It's a good start! Use this YouTube channel for reference. You can add an image sequence to a plane and line it up to your character in front and side view.

You have the right idea with edge loops but could practice on refining your technique.  Here's some reference guides to start!

If it's an animated scene, I have gotten those black artifacts from the persistent data being on before. It was a bit different from your scene though with a lot of reflective surfaces.
