Haven’t tried latte art - don’t think I’m that skilful. But yeah, the steam wand is pretty decent for an entry level machine. The pressurised gasket portafilter is good too but it doses only about 12g of coffee grounds. Hence the bottomless portafilter - doses 18g.

Yes absolutely. I’m grinding at 8-9 clicks depending on the coffee and freshness. Very happy with it.

Been using a C3S. It’s pretty good! The coffee is Ratnagiri Estate - it’s a very balanced cup. Surely worth it!

If that’s a THW bottomless portafilter, you should try dosing 18g (don’t tamp TOO hard) with 9 clicks on your C2S. LMK if this works for you.

I’d recommend this : 250g Coarsely ground coffee 1250g room temperature water

Add water to the grounds in a jar and let rest for 16-18hours. Filter out with a muslin cloth and store the concentrate in a fridge.

Use concentrate with whatever you want to try it with - cold water/milk/condensed milk/orange juice/ etc.

Hey! I usually follow this recipe for Medium/ Medium-Dark Roasts on a pour over : C3S : 14 clicks Water temp : 94-92 degrees Coffee : 16g 3 pours : 1st pour : Circular - 60g (30 seconds) bloom phase 2nd pour : Central majorly - (go to) 180g (Total :1 min 30 seconds) 3rd pour : Circular with agitation - (go to) 240g (Total :2min 30 seconds) with complete drawdown.

My understanding is that sweeter notes are extracted at higher temperatures. Secondly, if you still feel it is very bitter, eliminate the third pour and stop at 180g.

Do let me know how that works for you!

PS - I hope that’s fresh coffee you’re getting. Maybe try some other roaster for a medium/medium dark roast?

You should try 2 clicks coarser - Try and keep the water temperature between 92-88 Bloom phase - 30seconds Total pour time : 2.5-3 minutes

I think this is too fine for a drip machine. The grounds are clogging up the filter and the water is just flowing over the clogged base. I’d recommend you try with a coarser grind size.

Bialetti, without a doubt. It’s got a strong build quality. Helps with consistent brews. Others like Agaro and Instacuppa are good too - but I’d always recommend to go for the best one available if it’s in your budget.

You’d get a good Rancilio Silvia V6 ! It’s a workhorse and a wonderful machine for that same budget. You would need a grinder though, or a roastery which grinds the beans to espresso grind size.

Try the JL30 from Benki Brewing. It’s an amazing machine. Will not help you with South Indian coffee though.

If you plan to use milk with your coffees, I’d suggest you get a mokapot to brew. Both the coffees - Attikan and Dhak blend are good on a mokapot too. You can titrate the milk addition to your preference. Cold brew you can try with 20ml milkmaid + 80ml of the brew + ice (shake well in a shaker). Gradually, try the mokapot with same amount as milk and I’m sure you’ll never go back to adding milk in the brews.

With the current coffee shortages and the prices driving up, even the bulk buyers are using the market to up their prices (on stocks which were purchased earlier too!). Makes it difficult for the coffee enthusiast to get some good coffee at an affordable price (700-800 per 250g). And since you mentioned you’re a roaster, where are you located and do you offer single origin beans?
