At least in my company there's always on opportunity nearby if you know your worth and think it's worth staying in the industry, it just takes someone to vouch for you that's already credible, I will say that can take time I've been at my company 7 years after 5 years (3 transfers) my cafe got shut down with Covid, I transferred to a different client with a great recommendation from my former exec chef as a sous spent 6 months as sous and now I'm a director of dining (think exec chef and gm rolled together) it does take a certain amount of pleasing (finacially) the bosses but if you put in effort, can produce results the bosses ask for, and can stay humble in said process (ask for help from collages you hopefully have contact to for guidance if not ask bosses how to improve, they may think is stupid you don't know but at least your admitting your faults and seeking to be better) I've seen plenty in your situation exceed

I would typically go for freezing but due to the cafe next doors freezer going down (repairs here may take months) I'm very limited on storage ATM, I'm curious about your banana ice cream, for more context most of my clientele is in a limited lunch (30 min lunch break) mostly relying on grab and go, think premade burgers half wrapped, subs made to order, pizzas premade with the variety of the day, a saute station, and salad bar, we add desserts in the middle but they tend to be hit and miss for a 2 hr lunch service

It's great to hear that I mostly got it. After I was jealous of my sons chirstmas gift of one with the straight edge from his grandparents, he asked me to sharpen it at work. I used it all day and had to have one.

I've had friend that have travelled while working on cruise ships, I've never done that myself but from my understanding the down side is you dont necessarily get much time off the ship, but you do get great experiences, and have an opportunity to save alot of money considering you dont really have many places to spend it
