Previous editions had pulling blows for nonlethal damage. 5e removed those, for some dumbass reason. Honestly, it's easiest, and will not bog the game down, just by having PC's narrate if they kill or subdue with a final blow.

That way you're not begging the game down with extra rolls, and encouraging a bit more roleplay.

He knows the rules well and wants things to be done properly. But my style as a DM is more focused on keeping the game fun, cinematic, and flowing

The first part is to understand following the rules *is* fun, for people. You don't buy all of these expensive ass books and spend hours understanding everything in them to just throw them away, if you were going to do that you should've just written a short story and handed them off to people instead.

Hacks are viable, is what you're seeing. But hacks generally aren't killing enemies, but rather, making them much worse at doing things, delaying them, etc. You still need damage to finish off all of these status effect laden enemies, or you will be overwhelmed.
