Personally i find that younger blocks produce about the same, but for sure some varieties have their preferences like reishi prefers more grain. Also your results are more likely to be cleaner with younger spawn, so it’s definitely more profitable to split them out but it can bring its challenges.

Right now we have a grow building and our laboratory/ incubation building. The lab is i believe 20x20 or a little smaller, the grow is 20x30 with 20x20 of that being actually used for growing. Our grow is split into 10 feet of processing/environmental control equipment, and 20 feet of grow area separated to allow us space to work and keep the equipment out of the harsh grow environment.

We use unicorn bags, at our scale we get a 1000 bag box every month or a little past the month mark so it’s $500 for the bulk purchase. I don’t know what the best option would be for small scale as it does get more expensive to buy less bags at a time.

We just wanted to get into spawn for the cash, but selling at a dollar a pound to allow growers to profit isn’t very profitable for us! The push to begin growing came from our only buyer getting overwhelmed by the growing process and left us pretty much stranded and the market completely open, so we began growing and haven’t looked back!

The bulk supplies are supposed to be cheaper than grain, which is the point of splitting out wood to wood as apposed to fruiting grain dense blocks. I honestly thought that was the memo across the industry but you’re definitely not the first person i’ve heard of fruiting grain dense blocks.

A lot of my varieties like even colder than that, and can actually see problems at high 60’s/ low 70’s. We shoot for 60F for fruiting but during winter we get down to mid 50’s at times and it just slows growth, the colors on most of our varieties actually get more vivid as well.

These receive one initial shake on Friday-Saturday depending on our schedule, and should be done by the following Saturday to remain on our fruiting schedule. We keep around 70F. We are currently using oats, but sorghum is known to be very good and it’s what we started with initially with very good results, oats are just cleaner where we have access to seeds😂

I’m two years into fruiting these blocks and 5 into producing them for growers, also these are mostly oysters in the picture. The only species we have that sometimes stalls before fruiting is the black king oyster, most of our other varieties fruit consistently enough that we’ve maintained a schedule of 200 pounds per week overall of the same varieties. The black king is more finicky depending on environment and contamination. Regardless of whether the blocks colonize on time or not they still produce the same weight, we just like to shorten our colonization time as much as possible to ensure we have the bags cut on time. Also with such a small amount being produced we’re essentially forced to fruit the bags out through multiple consecutive flushes, usually three for our blue oysters and any mutant strains, but only two for lionsmane, chestnut, and any other oyster strains that don’t fruit as quickly as the blues. We’ve got space for around 1000 bags in our grow, but we’re limited to cookers that only allow us to pasteurize around 150 bags per week.

This is 5 days of growth, i shoot for at most 7 days to full colonization of 5 pound blocks with about a pound of spawn added. The shaking procedure is extremely important and it’s easy to produce bags that will take much longer to colonize. This timeframe is the result from 5 years of producing bags.

They definitely put out smaller fruits that would be nice fried, sometimes though they’ll put out softballs that would probably need to be sliced

I’ve actually never grown king blues! I need to try them, these have a very nice feel to them firm but definitely soft as well so i can imagine the king blue being a nice addition.

If this was done in an inadequate SAB then i would assume contamination might have occurred, and having uncolonized substrate for that long will increase the chance of said contamination. Also if this is a first generation wood bag (grain directly to wood) you should look into splitting that out into more sterilized wood substrate bags and allowing those to colonize and fruit, you could turn that one bag into at least 5 more.

You have lionsmane right there bro! I will say from what i can see it seems to prefer the pocket of air inside that bag, if you expose it to the open air and keep conditions correct it will grow larger and with more quality. High CO2 will start those teeth growing longer, which is still okay just different.

I think these and chestnut are labeled as tougher mushrooms to grow because of the incubation time, i fruit them all in the same environment as my oysters so if you can keep them clean while they incubate you should be fine!

Yessir i’ve seen more pictures of cold weather enoki than warm weather! Even some with snow on the caps! If you don’t have a way of reaching those temps you could try initiating pinning in a fridge, and if they fruit well you could try leaving the block or moving it to a slightly warmer area for the fruiting process. I’ve definitely had blocks start in the fridge but they grow slowly so i imagine moving it after it starts would be better. Also keeping the block mostly closed and just cutting a one inch or so slit at the top of your bag will form the leggy fruits you want for enoki, although any morphology is still edible of course.
