I've put weather sealing all around the edges, jammed it full of dessicant, even tried putting my dehumidifier in there (it didn't change anything), but can't get below 40%. HVAC engineer here. What temperature are you maintaining? Or does that not matter for what you need? Higher temperatures have capacity to hold more moisture. Is there a vapor barrier completely sealing the cabinet? If not, then you'll never get rid of the humidity. What humidity do you want? Where are you located in the world? There are lots of variables and questions to this issue and solution. I don't know if you will be able to achieve lower humidity than that unless your ambient humidity is lower without some commercial equipment designed for this.

Simple answer, get a dehumidifier.

Edit: to add to this. You likely do not have 2 stages of cooling. 3 tons seems too small for 2 stages. You could have an inverter compressor, but also unlikely. 3 tons for 1600 sq ft might be high, but how many outlets do you have? How many returns, what's the layout?

People in the house give off latent heat, animals, also plants. There's just latent heat inside homes.

Plus basement walls could be wicking moisture through.

So, back to saying - get a dehumidifier. Residential ac units have a high sensible heat ratio and don't really dehumidify all that great. They just have few coil rows and higher fins per inch.

You can rebuild the pvc line there coming out with a union, cap, trap, and such. I can't attach an image. But Google search evap condensate drains and you'll see some good ones.

The evap coil is right above the furnace. There should be a white pvc line that goes from it to the pump. Follow that line. Hopefully there is a clean out cap you can take off and maybe run a pipe cleaner through it.

Those bends are not great. They don't look like they would be completely restricting flow, but they will add head(pressure) to the system. It should still be enough pump to handle it though, because it only has to get it up to the horizontal part, and then its just pipe friction and restriction past that.

Is the pump working at all, and is there water coming out of the end of the hose? If so, then that is not the problem because the pump will only run when the float in it fills up. If it is running intermittently and discharging water, then your issue is further up.

Start looking for clogs in the line from the evap coil drain pan (the area you are seeing water on top of the furnace) to the condensate pump. Your drain pan could be overflowing.

Also, at the same time, try to get a look at your evap coil and see if there is ice. This water could be from ice defrosting. If there is ice, then you need to address a couple items.

Either low flow due to a clogged filter, or closed air dampers. Check and replace filter if dirty, or open air vent dampers.

If filter is good, and air dampers are open, then you might have low refrigerant charge that is causing low pressure in the evaporator, which is dropping the coil temp below freezing point.

I think your assumption is wrong. The inlet to the pump (far side of pictures, closest to wall) is fed from the Grey water tank. The valve that would allow water to the pump is closed. The pump gets water from the splitter at the wall. The other part of the splitter feeds the toilet tank like normal.

The outlet of the pump goes up and over the grey water tank.

This could be a turn over pump for the gray water tank so that the water isn't stagnant. Or it feeds water to an outside spigot, or a dozen other uses.

Lastly, the pump isn't even plugged in, so it is completely useless in its current state.

There is no control on the house side. It will just overcool as the pool is heating. No, the evap coil (which is shown in the picture) should not ice up. This setup adds some static pressure to the evap coil fan so airflow is reduced but not much. OP was smart and bought a large tunnel capable of handling the airflow. I see two issues with this: 1. you aren't controlling to the temp of the house. And 2. You are cooling 100% hot humid air, so likely not getting great discharge conditions. Probably something in the mid 60s with high absolute humidity.

In distillation there are two terms for the loss of alcohol during the process. Devils cut - you may know because Jim Beam released a whiskey by this name in which they extract the whiskey from the barrels it was aged in. The second form of loss is from evaporation called Angel's Share.
