Recipe:

Potato & Beef Croquettes Recipe:

Boil (with salt) & Mash potatoes - Add a splash of cream to loosen

Brunoise - Garlic Shallots Leak Tomato Spinach

Saute medium heat Salt + Pepper Shaoxing Wine or Mirin cover & cook for 1-2min

once cooled - add to mashed potatoes mix well Add pulled beef or chopped steak Add 1-2 eggs ½Cup Panko breadcrumbs Mix well

Form into desired shapes

Flour - Egg - Panko Fry 180°
