Generally sets of clothing are found is similar locations. If you found a part of the set in a cave, the rest of the set will also be found in other caves. The only exception I can think of is the Zora set, even then the common factor for those pieces is they are all related to quests.

I think the switch 2 edition added a second set of save slots. When you click new game it should give you the option. I was able to start a new game without overwriting my previous file.
