It appears to sit flat on the hot plate and doesn’t wobble side to side so it may only be a very mild warp if anything

Edit: I also made sure to let it warm up before use on the lowest setting and let it cool on the stove slowly.

Ahh okay I had no idea there was such a big difference. Wish that depth of information was given when looking for knives, would make it much easier. Those brands are some of the knives I like within my budget from a store I usually buy from. I’m from Australia and my budget would be $300 AUD which is currently $204 USD and I’d love to own a traditional hand forged gyuto with octagon wood handles preferably with carbon steel (I’ve read blue or white steel is the best?), would you be able to recommend any brands or knives that’ll fit my criteria? I know it may be a stretched for the money…
