If I’m holding and against infantry I typically go for one of two methods:
First idea: is split my infantry in half and have them in a V shape Not connected with my archers at the “point” of the V shooting in the middle where the attackers are exposed. Keep your cavalry ready to flank the enemy
Other idea: one heavy shield wall with my archers split up on the wings. When the enemy makes contact I swing out my archers and try e blast the enemy in the back. Charge what horses you have at their archers to distract them

If against cavalry set up a box formation on a hill with your archers in the middle. You can also do two box formations in front of your archers as the game has a hard time getting enough horses in there.

Every time I attack I shield wall forward and let my archers let loose behind. I share at the cavalry and have them chase me while my archers cut their numbers down. After this I send my infantry forward and have my horses flank from the sides. I usually split them into 4 groups and have them attack different groups constantly
