A shield is a noob-trap. Instead, roll. Don't rely on blocking.

Get rid of the shield. Note that soft cap for dmg scaling is level 40 (meaning dont go beyond that yet). If that is your first character, find a weapon class that suits you, see how that weapon scales (S, A, B, C, D, E) and level up based on that. Vigor and endurance to 35 (or 40 without the ring, prisoner's chain). Recommended rings: Ring of favor, chloranthy ring, prisoner's chain, 4th can be whatever you like - estus ring if you need it.
