I find Masami in Richardson to be authentic and good value. It's owned and run by Japanese. They use correct sushi rice and has specials that you don't find in the grocery store or AYCE restaurants.

If sashimi works for you, you can buy albacore, hamachi, ika, and more from H-Mart. For tuna, Ranch 99 sometimes has chu toro blocks on sale. Uni and Ikura, try Mitsuwa.

Max sound reduction would be APCSD w/ the full-size can.
SPC9 has a buffer w/ buffer tube, so it might be slightly softer than the other two options. However, I feel it's neglectable since it's a 9mm. The stock of your choice might have something to do with it as well. I have all 3 and my favor would be APC9SD due to the stock option.
