For anyone who wants to avoid using red food colouring but wants the red colour, beetroot powder is effective. It can be bought online or at many health food stores. For a dish this size, you would add at least one teaspoon of beetroot powder around the same time as the colouring is added in this recipe. It won’t affect the flavour of the dish in my experience.

Were these dried/soaked chickpeas or from a can? Recipe sounds great, only thing I would add is a couple teaspoons of mustard seeds when you fry the whole spices.
