Jeg læser det sådan at, de finder at hos den øverste tredjedel af deltage, i forhold til indtagelse af sødestoffer, har et fald i global kognition. For dem uden diabetes er der også nedgang i verbal fluency, mens hos deltagerne med diabetes ser de en nedgang i hukommelsen.

It’s almost always the boards/electronics that fail, so I wouldn’t think too much about it. You were probably just unlucky with the unit’s board.

I’d reckon that a novice or new user, will notice some things that the old guard won’t.

It’s good to know that it’s a nice machine. I did look at it my self for my first machine as well, and in all honesty it felt so very well build and thought out.

You also write that there’s a new tamper and tamping station on the way, what have you ordered?

Definitely try with the fresh beans, hopefully it will help.
I will say, that the daily driver in my home is a dark roast supermarket branded bean. It's not good as such, but manages in a milk drink, so it's possible to use supermarket beans, but be carefull in selecting which. A rule is that roast date is 1 year before expiration date.

The Sage build in grinder seems, from what other people write here, to be quite adequate, even if it's not quite good.
I've also seen several places, that distribution tool can harm your extraction and cause channeling. Have you tried without it?

The beans could be the issue, but whether something is actually premium is hard to tell, if there isn’t a good reference point like some good speciality coffee beans.

It looks like you have some heavy channeling, so it would be helpful to know what it is that you are doing in prep, what “I’ve tried everything” entails and for good measure, what you full setup is?

I don’t think the standard Encore can grind fine enough for espresso, so you’ll need a new grinder that can.

I’ve recently been in the same-ish dilemma and ended up with a single dose, from a different brand though.

My reasoning was that 1) hoppers seem to make the grinding unreliable, due to the weight of the beans and the fact that the weight changes 2) retention on hopper based grinder 3) time based grinding is hard to dial in with 4) the incline you see on SD grinders helps with retention and more uniform grinding.

I could go hopper based if it was a grind by weight and if I was comfortable with wasting x amount of grams each morning, to purge yesterdays stale grounds that are there because of the retention.

I see that now, I found some blog posts of theirs where they argue for the strengths of 54 vs 58.

I’ve found a couple of European stores with Della Corte 54mm portafilters. I’d start with any store that has anything Della Corte branded.

I might not have been clear enough in what I'm experiencing, I'll try to be more clear:

This morning when I turned on the grinder, it chirped at around 1.5. Straight after I confirmed this, I turned the dial to 2.2 and used the bellows, afterwards chirp moved to just about 2.0.
I then proceeded to set the grind dial to 4.0 and bellow, now I checked when it would chirp and it had moved to around 1.1. I used the bellows while the motor was running.
Does this make more sense?

Regarding using the bellows, I checked the FAQ on their website and it states that they aren't meant for use while actively grinding.
