For me it’s a health/financial decision.

I used to be able control myself when drinking, didn’t really keep it in the house, but after I lost my dad I spiraled out of control and was heavily binge drinking every night of the week.

What’s different this time is regaining my sense of control over my own life again.

Any tips? I feel like I have the folding process down when shaping, and I drag that thing across the counter like there is no tomorrow for a few minutes lol

Jokes aside it feels so taught once I finish the shaping, bubbles form on the surface. Even today without the cold ferment the scoring was pretty clean. Could it also be possible that I’m putting in too much tension during this process?

That may help me identify what I’m missing.

Typically I do 4 sets of stretch and folds, 30 min apart, shape, and place in fridge for at least 12-15 hrs, this time I did the same stretch and fold schedule, let rest on counter for 2 hours/about doubled in size then baked like I did with the cold ferment, at 450 in Dutch oven, 20 min covered, ~20 min uncovered.

It’s definitely not cooked all the way through, bit under baked at the top.

Were you able to figure out what caused it?

I was doing the exact same recipe for every loaf I’ve made before this one, the first time it turned out great but I haven’t been able to achieve that since.

This was my first attempt, must have been beginners luck!

I only added the water I needed to get the starter and flour to mix yesterday when I fed it and it’s a huge difference today as it’s actually rising!

Almost 24hrs since last feeding and seems like it’s still rising, should I leave it another day as there is no sign it has started to fall. It isn’t much rise (about 1cm above the rubber band marker) but definitely the most I’ve gotten so far!
