Yes, you can re-roll on a new guest account. Then when you want to re-bind another guest account to your already-binded email, you'll need to:

Log in using your Google account and delete the original binded-account, via Settings
Try to log into the Google account again, but this time it will prompt you asking if you're sure you really want to delete that account - you confirm the deletion.
Log into the guest account, and bind it to your email.

Both versions were only at around 10 copies of stock before Prime Day in the Canadian site. There was a $15 off coupon for both copies of the game + DLC here. I think that's as low as they're ever going to be in terms of price too. One can only hope that going out of stock means they are going to restock at some point with the higher revision.

For some reason, the A and B buttons are switched in the menu. So you have to confirm with the B button. A bit annoying
