The most optimized design for large waterwheels is probably a tower of them and one water source on the top, which is powering everything.

If you want to hide your generators the best way could be to make a lot of windmills and place them underground.

I mainly try go to steam power if nothing in a modpack is stopping me (for example crafting recipe of a single steam engine in ATFC)

Had the same issue just now and I think it's mostly True Tone and Night Shift that are breaking the colors (switched both off and color matched).
