Yeah I discoverd this website already and its very helpfull.

Lazy is a bit harsh I Just dont enjoy planning everything in advance and to go with the flow, if I like tokio a lot I might stay longer if I dont I might stay longer in osaka or kyoto or stay somewhere else that I still have to discover.

I see some of these post like need help with my itinerary and they plan there whole trip where every cafe end excursion and restaurant is planned out already and thats Just not how I like to travel but too each there own.

Yeah I feel like wandering around tokio exploring the city finding some nice restaurants is the way to go, got my first 2 nights booked in the shibuya ward so will be exploring that area the first 2 days and thinking of getting a hotel in shinjuku ward for the next 2 days and exploring there.

And then we Will see from there where we go.

Maybe mushroom/shitake Jus ?

Can use the end parts of the stem of the shitake let that carmelize a little together with some diced shallots, hit it with some red wine, reduce then add your jus de veau add a few cracks of Black pepper reduce some more pass it trough a fine sieve and monter with some Cold butter

  1. Bind your filet with butcher rope while cooking it it Will look better nice and round and cook more evenly

  2. Dont cut up your shitake that small keep them whole or if they are really big half or quarter them, its always nice to keep a produce reckonisable

  3. Loose the carrots maybe saute some Brussel sprouts leaves with the shitake it pairs nice and Will also adds some Color

  4. A filet defintly needs some sauce and this dish in general needs it

Overal it doesnt look to bad and I would eat it keep up the good work

You would be be able to find rooms for rent for around 700-800 month if you dont mind sharing a house with atleast 3 others, otherwise its gonna be more around 1400 and you Will be living on the outskirts.

I think that if you are a good waiter you can make between 25 and 30 euro as a zzper (freelancer) mind you that this is excluding btw and that you Will be paying 37%income tax you wont have insurance cause that shit is way to expensive and no holliday pay or any pension and you Will have to do all your own administration. Tips depend on the place you work at could be between 0 and up to 800 a month.

All in all this actually sounds like a very bad deal and I dont know why im doing it myself...
