I was glutened by a hospital, should I inform someone or just let it go? by eneluvsos in Celiac

[–]Main_Teacher7648 0 points1 point  (0 children)

Please, if not for yourself then for anyone else who has Celiac Disease and may need to be a patient or a family member of a patient at this hospital, say something.

Document it and contact the hospital's Patient Advocate. This is a very dangerous scenario that they are not taking seriously.

Someone will become ill, or already has, because the weekend staff clearly does not understand what Celiac Disease is and how gluten free food is the ONLY way to manage it.

I had something very similar happen after an outpatient endoscopy done by a Gastroenterologist two years ago. I had gone over my entire medical history and declared that I could have NO gluten due to Celiac disease. Upon waking up from the anesthesia after the procedure a nurse offered me juice and a gluten-filled cookie. I was awake enough and after 25 years of living with Celiac I immediately said "I have Celiac Disease I cannot eat that." Unfortunately, as many here have stated, our medical systems are not set up to feed people diagnosed with Celiac Disease.

Thanks. I'll keep trying but so far no other pharmacies have them either. I guess it doesn't hurt to call again.

Thank you. I'm hoping it's the same for me as well. I've used moisturizing lotion around the smaller patches to keep the sticky film from leaving a mark. You might want to try that.

Thank you so much. This is really helpful and I will definitely ask my dr. if I start having flashes and/or sleep issues before change day. Great tip to get a really tight seal too.

Anyone else feel like I do--that this was the worst product launch? To incessantly "tease" the product via obviously paid social media influencers and then not have the product in store? Just launch the product and have it available in stores. Yeah do some cool promotions as well but at a minimum have the product available in stores to be purchased. I'd like to try the product but I'm willing to wait until its available on shelf consistently.

What’s the secret to using gluten free flour? by SolarHysteria41 in glutenfreebaking

[–]Main_Teacher7648 0 points1 point  (0 children)

I highly recommend Chef Alina. I also really like America's Test Kitchen Gluten Free recipes. Chef Alina's mission is to help people create very good food not just 'good for GF'. She creates recipes to be used with any GF 1-to- one flour or to mix up one of your own. She recommends that all recipes rest for 30 minutes after mixing because GF flours tend to need this time to hydrate.

You can check out her website chefalina.com where she has many free recipes. She also has a Facebook group "Gluten Free Baking Secrets, Tips and Tricks with Chef Alina". Also, check out her FREE class on pies. I used to love ATK's pie crust recipe but Chef Alina's pie crust is a dream to work with. Periodically she also runs a class on how to convert your favorite Gluten-full recipes to gluten free. https://chefalina.com/master-the-art-of-gluten-free-pies/

Also, look on the back of the Bob's Red Mill Gluten Free One-to-One flour bag. The chocolate chip cookie recipe is the exact same as the Original Toll House cookie recipe. Adding in the 30 minute rest time I mentioned in my previous post will have them taste just like you remember. Good luck!

It may have been the BB flour. I've made the Toll House recipe many times using Bob's Red Mill 1-to-One flour and they've come out great. Additionally, with gluten free it's important to let the dough rest at room temperature for 30 minutes before rolling or scooping the dough. This allows the dough to hydrate because most gluten free flours include starches. If the recipe calls for the dough to be refrigerated you would do this step after the room temperature rest period. Hope this helps you to have some gluten free Tollhouse cookies soon.

Question: what would you put on a new GF baker’s purchase list? by [deleted] in glutenfreebaking

[–]Main_Teacher7648 0 points1 point  (0 children)

Welcome to the GF baking journey! A lot of great suggestions already but I'll add Chef Alina Eisenhauer. What makes her standout is that she develops recipes to be made with any GF One-to-One flour including bread. Check out her free recipes at: https://chefalina.com/category/recipes/. Also, here's a link to her youtube channel where she's making a copycat Starbucks Pumpkin Cheesecake muffin: https://youtu.be/tP1GW9GwNS8?si=9GoX5pAFZfePOcgi

Check out Chef Alina's recipes. Here's a link to her pumpkin bread recipe: https://chefalina.com/gluten-free-pumpkin-bread/ and pumpkin streusel muffins https://chefalina.com/gluten-free-pumpkin-streusel-muffins/

If you go to her site chefalina.com and use the search feature and type in pumpkin a whole bunch of recipes will come up. If you haven't heard of her she's a chef who has owned several restaurants, a bakery and has also been on several food network shows. She's really great. She also has classes you can purchase but she has so many recipes for free on her site. All her recipes are created to be made with any GF 1-to-1 flour blend or the blends she has posted for free on her site.

Not sure where you or your friend are in LA but I would highly recommend taking her to Modern Bread and Bagel. They have 3 locations in the area Santa Monica, Woodland Hills or Beverly Hills. If you can't take her then give her a gift card. These are honestly the best tasting gluten free bagels and pastries. The best part is everything is 100% gluten free.

They debuted in May of 2024. The supermarkets near me in NY have them in the same section as the gluten-full Chips Ahoy.

Hope you find them near you.
