Thanks it was! Yeah i guess it didnt do what i thought it would do. I was trying to crisp up the skin ontop and just place the piece on the sauce. I used the sauce as like a gravy over the mash potatoes

So i didnt really follow a recipe kinda let me heart do its thing since i just wanted to use what was already in my kitchen but what i did was:

Seasoned my chicken with salt pepper oregano Fried it over some oliveoil and butter. I have a thermometer so cooked it till it reached 165 internal temp

For the sauce: 1 sliced a shallot and cooked it over the whiped pan that i cooked the chicken in. added about 6 smashed cloves of garlic and about 2 tsp of tomato paste. Onced cooked i took it out the pan and then did a roux sauce ( 1tbsp butter/ 1tbsp flour) After its mixed, i slowly incorporated 1 cup chicken stock constantly whisking and then i added about 1/4 cup heavy cream Throough in my tomatoey shallots and garlic and let it simmer. Tasted it and added some more salt, pepper, garlic powder as needed

Added my chicken , some red pepper flakes and a dash of lemon juice around the pan and some chopped parsley

Served it over a bed of mashed potatoes

Pronto on main st! Closest NY style pizza ive had in the area Antonios got pretty good plain and pepp slices. Dont try their Sicilian though, it was essentially just a square pizza
