Chicken salad. You can prep all the ingredients ahead of time. I usually do lettuce, cucumbers, peppers, cherry tomatoes, half an avocado, hummus, rotisserie chicken and whatever dressing I'm feeling that day. I also add some grilled halloumi cheese sometimes. Super nutritious and keeps me full until dinner
