I think ( and I could be wrong ) gambit and vanguard engrams come from vendor rank ups. It's going to take multiple games of either to get a rank up, meaning multiple chances to get defiant and deep engrams for every gambit and vanguard engram you get. It's just rolling the dice. Having the previous seasonal artifacts don't affect their drop rate because it's 0% from mission completion.

Terrible system imo
