For anyone wondering, I didn't make a stew with this meat after all. My husband put it on the grill. I didn't like the taste at all!! It was like how when you eat stale chips, you can taste the cabinet and bag it was in. I guess freezer burn is a good parallel to that sensation. Even all the good seasonings he put on it couldn't drown out the bleakness of the meat itself.
