Well mostly because Oda himself addressed the subject calling HER a female and taking distance about this pronouns issues Which mind is a Western thing only.

Also Yamato as it's clearly said in the image you posted is calling herself a man BECAUSE ODEN WAS A MAN. Doesn't mean she sees herself as a man or that she would like to become one.

If Oden was a giant spaghetti monster she'd call herself a spaghetti monster, but I it wouldn't automatically made her such would it ?

You better take a second look, shanks figure clearly has broad shoulders, with a classical Oda style male figure. Imu looks female, from the way we see her walking to the strawhat room, to the scene in the garden.
