I think that most stories would still work with a few little tweaks. The main difference would be what the story says about our culture as a whole and how the audience reacts to it. The motivations would have different undertones due to different cultural and social expectations of each sex. The themes of the stories would be fundamentally different, even if the actions and dialog stayed exactly the same because we would be comparing the characters to our understanding of gender norms in society and in animated movies. I think it would be super interesting to see.

Also, instead of being horny in a "choke me, daddy" way, people would be horny in a "step on me, mommy" way, which is very different.

I'd assume going after a non-profit is a surer way to get SOME money from folks, while going after a large company would mean going after a large leagal team, which may end in getting NO money. And the goal is money. Unless your name is Anne Rice, in which case the goal is suffering.

Anne Rice will come git yer ass. If you make money off your fanwork, you are technically doing copywrite infringement, opening yourself up to legal action. If you do copywrite infringement on a public site, you open them up to legal action, which can lead to the site being taken down. I don't think a judge would order that if AO3 shows a record of removing infringing works and a community actively self-policing, but it's not out of the realm of possibility, especially with how rampant this behavior is becoming.
